Buddha Bowl 

Buddha bowls make up about 75% of my diet. They’re just so delicious and quick and easy to make! 

Buddha Bowl

  • Spinach 
  • Brown rice 
  • Sweet potato 
  • Tofu 
  • Cucumber 
  • Tomato 
  • Yellow and orange bell pepper 
  • Alfalfa sprouts 
  • Sesame seeds 

Fill a bowl with spinach leaves. Add brown rice, sweet potato, cubed tofu, and diced cucumber, tomato, and bell pepper. Sprinkle sesame seeds and top with alfalfa sprouts. 

Cashew Sauce

  • Cashews 
  • Water 
  • Garlic 
  • Salt 
  • Pepper 

Blend all ingredients together in a food processor, adding more water as necessary. Use sauce as a topping on the Buddha bowl. 

Other Buddha bowl filling ideas: chick peas, black beans, edamame, corn, carrot, mushrooms, brocolli, avocado, purple cabbage, beets, radish, zucchini.
