Colourful Salad Rolls 

Lately I’ve been trying to incorporate more raw food into my diet. Food begins to lose its nutritional value as it is cooked. Therefore, you absorb more of the vitamins and minerals in your food if you eat it raw. This recipe is a perfect way to include tons of raw fruits and veggies, and it’s also super colourful and pretty! 

Salad Rolls 

  • Rice noodles 
  • Rice paper wrappers 
  • Sliced up fruit and vegetables (I used bell pepper, cucumber, carrots, edamame, and strawberries)
  • Warm water 

Fill a large bowl halfway with warm water. Gently place 1 rice paper wrap into the water, submerging it. Leave it for about 15 seconds, until it is soft. Carefully remove the wrap and place it onto a plate or cutting board. Fill with fruit, vegetables, and rice noodles – careful not to overfill. Fold over the top ends, then fold over one side and roll it tightly.

Spicy Peanut Sauce

  • 2 tablespoons natural peanut butter 
  • 1 tablespoon apple cider vinegar 
  • 1 teaspoon soya sauce 
  • Sliced chilli pepper (as much or little as you like) 
  • Sliced ginger 
  • Warm water 

Combine all ingredients, stirring well. Add warm water as necessarily to achieve the desired consistency.

These salad rolls taste delicious with any combination of fruits and vegetables you can think of. I also love to add cilantro, unfortunately I was out today. The rolls can be eaten immediately, or chilled and saved for later. Enjoy!
